Summer Squash Noodles with Shrimp

This is a fast and easy light summer meal which could also be used as an early course in a larger meal. The "noodles" are strips of summer squash made using a vegetable peeler. This preparation is a good use of fresh, in season vegetables.

To prep the squash, just wash and peel into strips.
Saute in olive oil and chili-garlic paste for 2-3 minutes. Don't overcook! Add chopped herbs and a squeeze of lemon at the end (I used basil and lemon thyme).
Add some shrimp - these were tossed with sichaun pepper, black pepper and salt. You could also use a different protein, like grilled chicken, or tofu or fake meat if you want to keep it vegan.
