Cucumber, Strawberry, and Basil Salad

A great summer dish just in time for late fall! Cucumbers and strawberries are two wonderful summer foods. They're fresh and in season, and their high water content makes them lighter foods that are agreeable in hot weather. The basil helps bring the flavors of both together. Paired with salad greens and grilled shrimp, it's a nice lunch and can be served on its own as a side dish with other courses.

The salad is very simple to make. Dice strawberries and cucumbers, approximately equal amounts of both. Chop some basil and toss with salt and pepper. Add something acidic, like a squeeze of lemon or a splash of rice vinegar, and you're done. The result is a combination of sweet and tart and soft and crunchy. The quality of the dish will mostly be determined by the quality if the ingredients, so try to get some fresh and local!
